We use time-honored tradition dry curing techniques and only whole muscle cuts. Every piece is crafted with patience and care, so you get deep flavor and a truly satisfying bite. It takes 2-6 months to create this piece of art.

Where do your ingredients come from?

We work with trusted local farms around Washington and Oregon that share our values for quality and transparency. Every cut is chosen for freshness and taste.

What’s the best way to store and enjoy your meats?

WKeep our meats chilled and slice them thin for the best flavor. They’re great on a board, in a sandwich, or as a quick snack—however you like them.
